In Access 2007 is there an easy way to lock the datasheet, and only allow
entry and editing of records by suing the forms set up for these purposes?

I'm sure Access 2007 is the same as previous versions in this regards.
No, you can't lock the table. But you can hide the table.
Select the table. Right-click Properties. Place a check in the
Attributes Hidden check box.
Then allow only your data entry form or reports to be viewed by the
user.

To then allow yourself (or other authorized people) the opportunity to
see and work with the table, Click on Tools + Options + View tab
(Note: Access 2007, with it's Ribbon, may have this in a different
place.)
Place a check in the Show Hidden objects box.

Remember to then uncheck the Show Hidden Objects box when you are done
to re-hide the table.

If you have the application open directly to a form, and use custom ribbons
or ?pop-up? properties on the forms, the users won't have a chance to see
the tables/datasheets.

Of course, a determined individual could still get at the tables directly...
