Looking for Message Options similar to Outlook

Help! I'm a new Entourage User switching from Outlook.

Outlook has a delivery option 'Save sent messages to'. I can use this
to click a Browse button and specify a save folder on a per message
basis. I sort email in many folders for work and this is key for me.

Creating a rule in Entourage won't work because I have very specific
folders where info goes for a given email. Eg. customer quotes are
filed in folders by month - Dec 08, Nov 08 etc. Is there a way to have
a similar function in Entourage?

2008 only offers this as a menu command.

While your message is open select Message --> After Sending, Move To and
then select your folder. More recently used folders are typically
located at the top of the menu.
