Here's what I suspect is happening:

In saving backward from the new XML format (PPT 2007/Win & 2008/Mac) to the earlier
one (all earlier versions, both platforms) PPT tries to maintain the appearance of
your slides, even at the expense of editability. If a feature you've used in 2008
isn't supported in the earlier format, it gets converted to a picture so it looks
and prints the same as what you saw when creating it, but the recipient won't be
able to edit it unless they have 2007/2008.

This conversion happens when you save to the earlier PPT format OR when someone with
an earlier version and the 2007/2008 Compatibility Pack opens your 2007/2008 format
file.

If they don't have 2007 on the PC, one of those two things must be happening, else
they wouldn't be able to open the file at all.

So far as I know, there's no workaround that'll let you maintain the table as a
table in the older format. On the PC, you can select the table then Paste Special
as WMF or EMF, then ungroup it to convert it to editable PPT shapes. Something
similar may be possible at your end. So long as you can ungroup the table to the
component shapes, it should be editable, as shapes, on the PC.
