No "good" ideas
This is a bug in the way Word 2008 is converting to .doc. Depending on what
you put in the file, all manner of strange artefacts are possible.
Send them the Word 2008 .docx file and try the same test. There's a free
converter that enables Word 2000/2003 to open and save .docx files. They
will go and get the file from Microsoft Update if they need it.
That should solve the problem.
I can't go further than that without seeing a copy of the document. Whether
you see this bug or not depends what you put in the document.

I have a Mac Word 2008 document saved as a 97-2004 .doc file but when
users on Windows open the file in either Word 2000 or Word 2003 the
document shows a black background and jumbled text. Office 2007 users
experience no problem.
SP3 has been applied to Word 2003.
Any ideas?
