Mail Merge Tracking

I'm currently successfully creating a mail merge using Outlook and am able to
send the form email to several individuals. However, is there a way to track
if the email has been read using the tracking features of Outlook?

No, not via the standard Mail Merge feature.
You can achieve this with several Mail Merge add-ins though such as Send
Individually from Sperry Software;
