How do you turn on BCC of myself for every message I send? I want a bcc copy
to come into my inbox so I can file it into the appropriate folder for record
of my sent messages.

Also, when I create a new message, when I type, some preference is set to
type white letters on white background so I have to click on the letter color
button to change it to black for each e-mail I write. I tried to change it
in the Options tab but couldn't get it to work.

Umm EVERY message you send goes into your Sent Items. If you want to move
those messages into different folders, then set up a Rule to act on sent
messages.
