I am looking for a small male symbol to put next to my name in my
signature in Entourage. Please advise, and thank you.

Can I assume you mean the "mail" symbol such as the small envelope icon
and not the symbol for man? ;-)

Do this:

1. Go to Apple menu --> System Preferences... --> International -->
Input Menu.

2. At the top of the list select "Character Palette" and "Keyboard Viewer".

3. At the bottom of the window make sure the "Show input menu in menu
bar" item is selected as well. It should be automatically selected when
you select either of the items above.

4. Close your System Preferences International window.

This will place a small flag of your country in the menu bar next to
your clock. This is called the "International menu".

5. From International menu select "Show Character Palette".

This will open a window with all varieties of symbols and language
characters.

6. In the View drop-down menu at the very top select "All Characters".

7. Select the "by Character" tab just below the View drop-down menu.

8. Twiddle the disclosure triangle for "Symbols" in the upper left.

9. Below Symbols select "Miscellaneous Symbols".

10. In the list of symbols on the left scroll down until you find the
"ENVELOPE" icon.

Note that this icon is present only in a handful of fonts.

11. Select an icon in a font that you think should be present on your
recipient's computer. He must have this same font on his computer for
the icon to display properly.

12. At the bottom of the "Characters" palette, click the "Insert with
Font" button to insert the icon in your front-most application at the
blinking insertion point.

I think you can probably see that using font symbols may not be a good
idea. They may not translate to the same icon when viewed on another
person's computer. Test first and use with caution.

When sending your message from Entourage, you may be prompted about
having to send in Unicode format. Just click OK to continue.

FYI, you can also find the male symbol here too. :)

Hope this helps!
