Master documents and subdocuments

I am so confused on master documents and subdocuments. When you create an
outline form it alters the document. Is there another way to build chapters
or dividers in a document that have nice little tabs like notebook dividers?

Word doesn't do tabs in the way you envisage. As for Master documents -
