I stumbled across a TEX addin for OneNote and link to it from http://blogs.msdn.com/johnguin/archive/2009/12/29/equations-and-tex-support-for-onenote-2007.aspx. I haven't had a chance to try it out, but can tell that the equation it creates gets stored as an image, so I don't think you can edit it once done..
