I am working with the following formula;
=IF(C33=0,"NILL",B35*C31)
If the sum (in C35) of B35*C31 is equal to or greater then $300.00, then I
need C35 to show a maximum of $300.00, if not I need C35 to show the true
value of B35*C31

=MIN(300,B35*C31)

I think this is what you want:

=if(C33=0, "", min(300, B35*C31))

Try replacing...

B35*C31

with

MIN(300,B35*C31)
