Measure work in Process

Hi

i need to create different Reports which will measure work in process how do
i do that ?
1 volume of work into process (oredr recived, projects created , tickets
opened) this is acount of the work items and measure the arrival of new work
into process.

2 volume of work compleated simalar as above

should i create queary on date if yes what?
