Meeting Organizer in Calendar

If you are a recurring meeting organizer and have setup the meeting in
Outlook Calendar. Is there a way to remove yourself from 1 specific date
without cancelling the entire meeting for that particular date?
Evey time I attempt to remove the organizer the only option I get is to
cancel the meeting.

No, but you can send a separate message to the organizer telling him/her not to attend that specific meeting.
