Meeting Planner / Request

I didn't know if the following would work, and how it
would work, if it were possible...can anyone shed some
light....

We have a Supervisor Training session, and it is offered
at three different dates, but people can only choose one,
and HR is wanting to make it easy for supervisors to
choose one, and put it on their calendar, as well as keep
tallies of how many are in the class....one idea was..to
invite all necessary employees to three meetings, and
instruct them to only accept one of the three and decline
the other two.

HELP!!!!
