I had this happen also. It drove me crazy, then I found
that you can add a switch to the end of your merged date
and format it the way you want it to appear. Go to where
you can see the codes and add at the end of your date
\@ "MM DD, YYYY" I think this is correct or you can go
to help and select "ate-Time Picture (\@) field switch"

I have merged an excel workbook with Word and have the date fields layed
out dd/mm/yyyy in excel. They are automatically changed into mm/dd/yy
format in the mail merge.
