Merging Spouse Names

How to best do mailing labels (i.e. Holiday cards) and
merge contact name (i.e. John Doe) and spouse name (i.e.
Jane) -- to Read John and Jane Doe... BUT to also run for
contacts without spouse names so they won't look like
(i.e. Fred and Smith)
