Message Theme does not change format

When sending a message in Outlook 2007, I select the text to format, click on
Themes from the Ribbon under Options. I select a pre-defined theme and
nothing happens. I've chosen several different themes, but nothing happens.
Even if I change the font color and font under themes, it still does not
change. Can anyone tell me what I am doing wrong?
