migrate from 2000 to 2003 on new laptop

I have just purchased a new notebook with Windows XP
Professional and bought a full version of MS Office Small
Business Edition 2003, which is installed on my laptop. I
want to phase out my old desktop with Windows 98SE and
Office 2000. How do I:

1) transfer ALL my appointments, contacts, emails, notes,
tasks etc from the old machine to the new notebook keeping
the same arrangement of folders. I used Outlook 2000
backup facility to location C:\WINDOWS\Local
Settings\Application Data\Microsoft\Outlook\outlook
backup.pst , and want to use a USB storage device (memory
key) to transfer files from one computer to another. How
do I set up my new Outlook 2003 email accounts to ensure
they work in the same way as on old machine?

2) How do I customize Outlook Today to display: the day of
the week and date i.e. Thursday, 15 April 04

note that i'm also interested in how to migrate my calendar and task items
into a new Outlook2003 Personal Folder file.
