We are in the process of migrating projects from MPP 2003/SP3 to MPP
2007/SP1. Before doing so I wanted to know if anyone would share some
'lessons learned' that I should aware of.

I'm going to go on the assumption that you are referring to Project
Server 2003 and MOPS 2007.
The biggest lesson learned is TEST! Ideally, you will do at least two
test migrations using your production MOPS 2007 hardware. You can use
a test environment or virtuals, but I like testing with as few
variables as possible.
The Project Server migration is not too bad, as long as you have no
customizations in your 2003 environment. The WSS migration can be
tricky. If you've got anything custom in your Project Workspaces, be
prepared for the custom stuff not to migrate. This includes new lists,
or even modifications to the standard lists.
Another big one is COMMUNICATE! Let the users know what you're doing.
Make sure they know when to stop using P2003. Make sure you do the
desktop transition cleanly, and that users don't try to connect to
MOPS 2007 with Project Pro 2003, and they don't try to open P2003
schedules with Project Pro 2007.
It can be done, and it can be done successfully. Don't underestimate
it! This is not a simple transition like upgrading Office. This is a
big deal - a big project, really - and it should be managed
accordingly.
