MIME encoding in google email

We are running Exchange Server 2000 with SP3. Gmail (from google) seems to be
conflicting with the MIME in Exchange - the message will begin with
Mime-Version: 1.0
Content-Type: multipart/mixed;

with the actual text of the message appearing later. There is usually no
subject, and attachments are not decoded. These emails are not spam or junk
mail; they are business-related.
Message encoding on the server is set to MIME - Provide message body as
plain text; Character sets for both MIME and non-MIME are Western European
(ISO-8859-1).

How should we fix this?
