Minimizing Outlook, can it be placed in the taskbar?

Is there a way one can minimize Outlook to the taskbar? It always stays on
the tool bar.

Tool bar? Do you mean system tray? Are you using Outlook 2003?
If so, R click the Outlook icon in the system tray and uncheck "Hide when
minimized"

It can be done, but I'd like it to NOT close when clicking the X.. I'd like
it to minimize same as MSN Messenger does.. I like the email client to run
all the time

I don't know of a way to do that, but you can make it throw up an "are you
sure you want to exit?" dialog.
