Missing UK Postal Code

How do the postal codes work in general? I renamed a field from Zip Code to
Postcode and the UK post codes disappear.

Sounds like you are probably using the Address Block. Instead of using
that, just insert the mergefields that YOU want to use in the configuration
that YOU want.
