How do I show all 7 days in the monthly view without
saturday and sunday sharing the same cell?

Go to View | Current View | Customize Current View (in Outlook 2003 it's
View | Arrange By | Current View | Customize Current View), click the Other
Settings button, and in the Month section, clear the checkbox for "Compress
weekend days".
