All of our forms users are in our network and all have InfoPath installed.

Is there any benefit to moving to a Moss server or to web forms?

I do not see one.

Hey Art,
One of the benefits, is the issue you noted in your last post goes away ;o)
but aside from that hosting your forms through MOSS removes the need to have
the InfoPath client installed on each users machine.
In addition to this moving to MOSS provides you with a whole you set of
functionality options in regards to workflow and version control on your
form.

However even with the above benefits MOSS is a much bigger product than just
forms server, considering you would need the enterprise version of MOSS to
get access to InfoPath form services you would probably also want to look at
what other benefit it could provide you, e.g. Intranet replacement with a
central area for staff to access their forms, business wide document
storage, lists for company discussions, Central calendars, contact lists,
MySites etc...

Your other option is to look at purchasing Form Server by it's self however,
personally I don't think this would offer much benefit over getting a full
blown MOSS license.

Your best bet is to contact someone local to you who is willing to give you
a Demo of MOSS and it's features, then make a descision as to how MOSS could
benefit you organisaion. If you can't find anyone local contact you local MS
office and I'm sure they can put you in touch with a local MS partner.

I know this probably doesn't give you a direct answer but I hope it gives
you some more information to go on

Using InfoPath forms service allows you to deploy forms to a wider range of
users, on different OS platforms and outside for your corp network.

If you are 100% certain that you can control the users who access your forms
and know that each user will have the InfoPath client installed then you
won't be gaining much by going to browser based forms. Other than using
things like SharePoint workflow and integration with other SharePoint
features.
