move from one unprotected field to another

I have created a document in word, protected the entire document and then
allowed for numerous "spaces" to be edited by other users. My goal is for
persons to be able to open the document, the cursor start on the first field
they can edit, they would input whatever information for that field, then hit
"Tab" (or any other key really, but nothing involving taking their hands off
the keyboard) and then the cursor moves to the next field that not protected.
I also want the field "sizes" to be locked. The unprotected field would be
large enough to allow for whatever information for that field.

What you are talking about is what Word calls an "online form." Check this
in help. For more about online forms, follow the links at
http://addbalance.com/word/wordwebresources.htm#Forms or
http://word.mvps.org/FAQs/Customization/FillinTheBlanks.htm especially Dian
Chapman's series of articles. You may also want to look at
http://www.word.mvps.org/FAQs/TblsFldsFms/LinesInForms.htm.

You'll find that you can use text formfields to hold information to be typed
by the user. These do have a size limit. Yo can also leave entire sections
unprotected.

Hope this helps,
