Move Project Server and SharePoint to New Servers with SQL Server

Hello all,

Current Setup:

Server A (Web server)
Windows Server 2003 Enterprise Edition (no service pack)
Windows SharePoint Services (no service pack)
Microsoft Office Project Server 2003 SP1

Server B (Database server)
Windows Server 2003 Enterprise Edition (no service pack)
SQL Server 2000 SP3a


Proposed New Setup:

Server C (Web Server)
Windows 2003 Server R2 Standard Edition (fully patched - latest and greatest
of everything)
Windows SharePoint Services 2003 SP2
Microsoft Office Project Server 2003 SP2

Server D (Database Server)
Windows 2003 Server R2 Enterprise Edition (fully patched - latest and
greatest of everything)
SQL Server 2005 Enterprise Edition (no service pack)


Task:
I have been asked to move the applications and databases from our "Current
Setup" to the "Proposed New Setup." This will involve moving the SQL 2000
databases to the SQL 2005 application. I would prefer to do an upgrade of
the SQL 2000 instance to SQL 2005 ... BUT ... I have been instructed to
attempt to just move them to SQL 2005 first. I noticed that there is an
option in the SQL 2005 installation to make it backwards compatible with SQL
2000.

Questions:
1. Does anyone have any knowledge to share on doing this type of "migration?"
2. Should I chose the SQL 2000 backwards compatibility option on the SQL
2005 installation? What are the consequences?
