Move projects from one server to another

We are moving all of our projects from one server installation to
another. I can't do a complete backup and restore b/c the target
server is already an operating MOSS environment so we can't just
restore the contentdb.

The question I have is when I use the file --> save as and then go to
import enterpise project I lose the enterprise custom fields even
though I have recreated them identically on the new server. I have
tried copy pasting into a text field and then pasting back into the
enterprise field on the new server but no luck.

Any suggestions Please???

Is the source system server 2003 or server 2007 ? because if it is server
2003 then you will have to follow migration documentation.
