Is there a shortcut to moving from one open document to another rather than going to Window and choosing the other document?

cmd~
works system wide, not just in Office
ctrl-w may also be helpful depending on your full keyboard access
system pref.

You can also set your own--in Word, look in Tools | Customize, click
Keyboard, select Window and Help in the left column, and in the right
column, find NextWindow and PrevWindow. You can assign a keyboard shortcut
in the box below.

Try Command + F6 or Option + F6. Those are the Microsoft Office Defaults.
