It appears that MSDN Universal does not include Office for Mac or other Mac
applications.

Does anyone know why this is and why neither the Mactopia nor MSDN web sites
explicitly mention this?

Someone does, certainly, but I've never heard an explicit reason.
Probably a matter of what MSDN subscribers have asked for, and said
they'd pay for.

As far as why it's not explicitly mentioned - I suspect it's because MS
doesn't mention everything that *isn't* available. From the MSDN web
site (FAQs):

Some Microsoft products are not included in MSDN Subscriptions due to
special licensing terms, technical restrictions, or developer relevance.
If you would like to request a product be added to the subscription,
please use the Contact Us Web form to submit your request. Please visit
the MSDN Index for a complete list of all discs currently included in
MSDN Subscriptions.
