.msi install for SP2?

What is the best practice for installing SP1 & SP2 through
an MSI? Take a before/after snapshot of the lab machine
before and after installing JUST the service packs, or
before installing outlook completely and after the
installation of the service packs?

Secondly should SP1 and SP2 be sent out in 2 seperate MSIs
or just one?
