We are doing a multi monitor media wall and would like to
do the following
1. span one ppt presentationa across 2 or 3 monitors
2. run 2 or 3 separate presentations simultaneously on 3
separate monitors from one computer

Which is better a graphics card that has 2 outputs or
several graphics cards.

The difference is in whether you want the software to do the spanning or the
graphics card to do it. A graphics card can span across multiple monitors
only if it supports multiple outputs. Spanning can also be achieved through
software irrespective of whether the graphics card has multiple outputs or
single output.
