Don't know if you can have multiple notebooks but, if you can, how do you go
about doing it?

You can, in theory, have as many Notebooks as you like, I think. The
problem comes when OneNote tries to find them.
If you look in Tools | Options | Open and Save there is a location
defining where your default notebook is stored.
There is nothing stopping you making a folder My Notebook2 etc
The practical issue is fiddling around in the Tools menu to change
where OneNote will look for your content and remembering, when you hae
OneNote open, which notebook you are in.
There is also potentially an issue about what you want to have open
when you start up OneNote. More fiddling.
My $0.02 is with Erik. When possible try to work within the default My
Notebook folder structure.
