Multiple page set ups

For each of the different kinds of stationary, different kinds o
letters I use:
Is there a way to create multiple "defaults" for Page Set up?
Do I create a blank template for each kind of page setup I want?
I'm guessing I would create a folder called something like, "Templates
and then save various blank pages with the page setup I want, namin
each one respectively. I wasn't sure if this is the best way to d
this

That's about right. You already have a folder that your templates are in, and
when you make a new one, I think Word will put it there unless you tell it to
put it somewhere else.

Then, when you select "New" under the Office Menu (not when you press Ctrl-N), a
panel opens up where you can select which template to base your new document on.

I'd create a template for each type of stationery. Save the template files
in the User Templates folder, whose location you'll find in the File
Locations dialog box (File tab | Options | Advanced | File
Locations--assuming that you are using Word 2010 or 2013).
