Can anyone tell me how to insert a symbol for crescendo, as in musical
notation?

I've tried the opus fonts but can't find the symbol there - plenty of
clefs and notes but no dynamics markers. Likewise with other music
fonts.

I have been using < but it doesn't really substitute for the elongated
version that's used in music manuscripts.

Google is your friend. Here are couple of sites with loads of resources.

See if one of those can get you a font. Some of them appear to be free.
