Is there an advantage/disadvantage in designating the cells to fit to content?
What is the smartest 'default' for table formatting?

Whether the effects you get when choosing the 'fit text' option are beneficial depends on how well the results conform with your
requirements.

Likewise, the "smartest 'default' for table formatting" depends on your requirements.

There is no 'one size fits all' default that's best for any of these options - they're just a starting point for you to apply your
own customizations to.
