When I send an email to someone the name that shows in the recipients from field in their inbox is not the name that I want shown. How do I change this?

If this person is in your Address Book, Entourage will use their name as it
exists in the Address Book rather than the one in their message. You can
change their name in your Address Book to what you want to see.

Am I understanding your question correctly?

I think you mean your own credentials when you send a mail to someone, you
can change them in Tools - Accounts, double click the account and change
your name there.

I have exactly the same problem, instead of having
My Name <[email protected]>
I have
Some else's Name <[email protected]>

The address is mine indeed but the name is wrong - it is actually the name of the person who register the program (entourage). Although the computer name has been changed, this issue remains.
In the account settings, the name is mine as well but it seems to be ignored anyway.

Have a look at your "me" contact in your Entourage address book, this is
probably still set to the "old" user.
Your "me" contact has a different symbol in front of it; you can try to edit
this contact or delete it and assign another contact as "me" contact.
