name order reverses when accesssed from new email

I use Outlook to send and receive email.

I have my contacts sorted by first name first. And filed
as LAST name first.

HERE'S MY PROBLEM:
I want to see my contacts as last name first when I send
a new email. It's not showing properly. Instead what I'm
getting is a sorting of contacts alphabetically by last
name. I want them to be filed last name first!

(I also do not want to have to go in and change my method
of sorting contacts...i have 800+ contacts)
