New email in inbox changes to read but never actually opened

I think you mean "changes to read". For Outlook 2003, right-click the gray
area around the preview pane and select "Reading Pane Options". Modify the
properties for marking a messages as read there.

If you're not using the Reading Pane, then you must have some kind of add-in
that is scanning the message for some reason and it is causing the marking
as read.
