New Exchange Server, Outlook won't let me change

I've set up a new Exchange server and have transferred some mailboxes to the
new server. Of course on the user's computers, Using Outlook 2003, they get
an error that the old server is no longer there, so I go into accounts and
all I want to do is change the old server to the new but the box is greyed
out so I can't. I can't delete the old server because it gives me an error
that you can't delete the default server, I can't set up the new server
because it gives me an error that you can't have two exchange servers. There
seems to be no way to just switch which Exchange server it looks at.

This seems crazy and counter-intuitive. I'm sure orgs create new servers
from time to time, how on earth do you switch the users to the new server?

What method did you use to move the mailboxes? Did you delete and recreate
the Outlook profile? If that doesn't work, it's more than likely you need to
post in the Exchange newsgroup instead.

In Exchange I right click on the mail box and select move to new server. It
doesn't matter, I've checked some boxes that I haven't moved yet and the
option to change Exchange server is still greyed out. It just seems as if
Outlook has no way to change Exchange server at all.

If the Exchange Server has been properly added to the domain and site,
Outlook clients will automagically find the new server the first ligin after
the mailbox has been moved:

If it were true that Outlook was unable to find a new Exchange server we'd
all still be using Exchange 5.5.

I know what is SUPPOSED to happen, however it is NOT happening. When I move
a mailbox from the old server to the new server, whether I use AD or the
Exchange Server when the user opens Outlook it will only look at the old
server and give an error message that there is no mailbox by that name. So
what is going wrong? I have to create a bogus pop3 account, delete the old
exchange server, create the new exchange server, then delete the bogus pop3
account. It will take me weeks to hit everybody and do this.
