New Letter not showing in recent activity

While a contact is open, I select new letter to contact,
write the letter, and then save it. But it does not
appear in the activities list. Is there a way to view
all activities which involve certain contacts. I may
want to have a list of all emails, letters, etc. written
to that contact.
