In the "Mail Preferences" I have selected that new emails show up in "bold" and in the color "purple" so they are easily noticed. Some emails are highlighted in purple & others are not. Why is that? How can I fix it?

You're the first person that has probably ever tried it...or least you are
the first to report. I've never used the feature and think it is overkill.

Try selecting under View in the Menu bar "show unread only." Use Rules to
move emails to folders rather than having everything in your Inbox.

Colors in quoting are good, but for unread not needed. IMHO
