"new office document": how do I lose the default tabs to customise the whole thing?

Office 2000 under Windows xp.

I am trying to create some templates for my documents - I know how to
create them and make new tabs on the "New Office Document" window, that's
not a problem, but everything is looking crowded with all the old pre-
installed stuff that I never use.

How do I get rid of all the old tabs so I just get a nice clean look
instead of a lot of clutter?
