If I have excel already open without a sheet open, and I am working on another app, when I switch back to excel it automatically opens a new blank sheet.
This also happens when I start up.

How can I make it stop doing that? Its really annoying to have to get rid of it every time.

You cant! This is the result of conforming to Apple's development
guidelines. You can minimize the issue by leaving the sheet you are working
on open, or switching to Excel using Command-Tab instead of selecting it
from the dock.
