In Excel I'm trying to simply use this, (C) to indicate a cell phone number
and Excel keeps defaulting to the copyright sympbol (small c with a circle
around it). How can I format this so this symbol will NOT appear?

Hello J -

This is evidence of a feature called AutoCorrect, but it's simple enough to
deal with in several ways:)

If it's just an occasional thing simply type the (c) as you normally would
then immediately key Command+Z (Undo).

If you want to permanently change the behavior go to Tools> AutoCorrect,
select the item in the list (it's the very first one) the either modify the
"trigger" characters [I've reset mine to )c which is never used for anything
else] or Delete the entry altogether if you never have a need for © or would
prefer to use a different means when it is needed.
