Non SP1 clients connecting to SP1 servers

We have no automated way of ensuring that all of our managers have updated
their copies of Project Pro 2003 to SP1.

If we upgrade the server (PS03) to SP1 and then a someone with Project Pro
that is NOT at SP1 connects, does anything bad happen?

In this case, bad is defined as something that causes data corruption.
Being unable to connect would be fine.

You can SP the clients and not the server, but not the other way around.

Yes, but what happens if a non-SP1 client tries to access an SP1 server?
