My wife somehow changed her default template for opening new Word documents.
Since we have the same version of word on our machines, can I just take my
normal.dot and put it on her machine overwriting the one she messed up?

Yes. That should work OK.

As an additional precaution, I would re-name the existing "normal.dot" file
on her computer as "normal.old", before you copy the "normal.dot" file from
your computer. Then, if the file doesn't work properly on her computer, you
will be able to reverse your changes.

Incidentally, you might find that when you transfer normal.dot from your
computer, it changes the user details and replaces her name and initials,
etc with yours. That is very easy to change, it happens.

As an additional protection against future unwanted changes to normal.dot
template - open Word. Then, click on Options, followed by Save. Tick the
box marked "Prompt to save Normal template".
