Notes

I tried adding a note to my task in my project prof., however after
publishing the project, the note didn't show up.

If you're talking about the indicator column showing a note icon in project web access I've found that this column does not act at all like the indicator column in project pro.

And I've also found no clear documentation of exactly how it is supposed to work. Either way, that note icon will not show up in PWA no matter how hard you try. However, you can add the Note column to a view if you like. Hope that helps.

The indicator column in Project Web Access in the Project Center displays
only indicators for Risks, Issues, Documents
The indicator column in Project Web Access detail views is fairly useless
The indicator column in Project Web Access Timesheets displays notes and a
whole bunch o' status indicators, which are delineated in our books.
