Can I change the default number of rows in Excel from the standard 65k to 100k as a new default?

No. You're stuck with 65536 rows per worksheet.

What do you wish to do?

Several of the more knowledgeable persons have code to add data to more than
65536 rows split across more than one worksheet.

Have a look at this google search result.
