How to set up a "recurrence" that is based on date to automatically fall
within the work week?

I am not sure form your post what exactly you want to do. Can you try
explaining another way?

The options are shown in the Recurrence window. What's not too clear is that
you can say daily every 5 days, weekly every 7 weeks etc.
