ODBC Connection only list first 500 tables

I am attempting to connect to an Oracle database and when I establish the
connection, I only get a list that shows the first 500 tables. I scroll all
the way down the list but it stops there. How can I view the other tables in
the database?

You are probably logging in as the DBA which can see all tables - including
system tables.

The best way to do this is to set up a User in Oracle that has a more
limited set of permissions.
When you link as that user, you will only see those tables you are allowed
to.
