Office Professional Plus Student Select, any license, can be installed onto
one computer with a second portable device for exclusive use of the primary
user of the first computer. If you paid $66.40 for it this is what you got.
So you can not do what you want in reference to Mom's installation. This is
all in your EULA and that is the restrictions you purchased the program's
license with.
Now, if this was Home and Student version of Office 2007 (that would not be
the professional version and won't have Outlook) then it can be installed
onto three computers within the same household. This isn't available
through the Student Select program. Amazon sells it currently for $79.99
with free shipping.

Academic Users Only. Fully featured version, available through the Microsoft
Student Select program. This product allows for personal use (and the
license will never expire). You must be a student, faculty or staff member
of a participating academic institution to qualify for purchase.

Obviously someone qualified for the purchase and has an .edu email address
